Easy French Crepes

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1 tablespoon sugar optional
  • 1 teaspoon vanilla extract optional

Instructions:

In a blender, combine flour, eggs, milk, melted butter, salt, sugar, and vanilla extract if desired

Blend until smooth

Heat a non-stick skillet or crepe pan over medium-high heat

Lightly grease the pan with a small amount of butter or oil

Pour a small amount of batter into the center of the hot pan, swirling it around to coat the bottom evenly

Cook for about 1-2 minutes until the edges start to lift and the crepe becomes lightly golden underneath

Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side until golden

Repeat the process with the remaining batter, adding a little more butter or oil to the pan as needed

Serve the crepes warm with your favorite fillings, such as Nutella, strawberries, whipped cream, or powdered sugar

Ingredients:

  • 1 pound ground beef or turkey
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 head of iceberg lettuce, leaves separated and washed
  • 1 avocado, sliced
  • Salsa or hot sauce for serving

Instructions:

In a large skillet over medium-high heat, brown the ground meat until fully cooked

Drain any excess fat if needed

Add the chopped onion and minced garlic to the skillet with the cooked meat

Saut for 2-3 minutes until onions are translucent

Coconut-Margarita Ice Pops

Ingredients:

  • 1 can 13
  • 5 oz coconut milk
  • 1/2 cup lime juice
  • 1/2 cup tequila
  • 1/4 cup triple sec
  • 1/4 cup simple syrup
  • Zest of 1 lime

Instructions:

Blend coconut milk, lime juice, tequila, triple sec, simple syrup, and lime zest together in a blender

Mix until it's smooth

Put the mix into molds for ice pops

Put ice pop sticks into the molds and freeze them for at least six hours, or until they are solid

Ingredients:

  • 1 cup canned pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 cup buttermilk
  • 1/2 cup powdered sugar for coating
  • Oil for frying

Instructions:

In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, melted butter, egg, and vanilla extract until well combined

In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger

Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, until the batter is smooth

Heat oil in a deep fryer or heavy-bottomed pot to 350F 175C

Drop spoonfuls of the batter into the hot oil using a cookie scoop or spoon

Fry until golden brown, about 2-3 minutes per side

Remove the pumpkin poppers from the oil and drain on paper towels to remove excess oil

While still warm, roll the poppers in powdered sugar to coat them evenly

Serve the pumpkin poppers warm and enjoy!

Garlic Butter Lobster Tails

Ingredients:

  • 4 lobster tails
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced

Instructions:

Preheat oven to 400F 200C

Using kitchen shears, cut the top of the lobster shells lengthwise and use a knife to carefully loosen the meat from the shells, leaving it attached at the base

Gently lift the meat through the slit and rest it on top of the shells

In a small saucepan, melt the butter over medium heat

Add minced garlic and cook until fragrant, about 1-2 minutes

Brush the garlic butter mixture generously over the exposed lobster meat

Season lobster tails with salt and black pepper according to taste

Place the lobster tails on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the lobster meat is opaque and cooked through

Garnish with chopped parsley and serve hot with lemon wedges on the side

Brown Rice & Quinoa Chicken Tortilla Soup



This hearty and nutritious soup combines the wholesome flavors of brown rice, quinoa, chicken, and vegetables in a flavorful broth, perfect for warming up on chilly fall evenings.

Ingredients:

  • 1 cup cooked brown rice
  • 1 cup cooked quinoa
  • 2 cups shredded cooked chicken breast
  • 1 can 14
  • 5 oz diced tomatoes
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn kernels, drained
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 6 cups chicken broth
  • Salt and pepper to taste
  • Tortilla strips, avocado slices, lime wedges, and cilantro for serving

Instructions:

Put onions, garlic, and jalapeo in a large pot and cook them until they get soft

Black beans, corn, cumin, chili powder, and paprika should all be added

Mix well

Add the chicken broth and heat it up

Turn down the heat and let it cook for 15 minutes

Put in cooked chicken, quinoa, and brown rice

Bring it to a boil again

Add pepper and salt to taste

Add tortilla strips, avocado slices, lime wedges, and cilantro on top while the food is still hot
