Ingredients:
- 1 cup canned pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup buttermilk
- 1/2 cup powdered sugar for coating
- Oil for frying
Instructions:
In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, melted butter, egg, and vanilla extract until well combined
In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger
Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, until the batter is smooth
Heat oil in a deep fryer or heavy-bottomed pot to 350F 175C
Drop spoonfuls of the batter into the hot oil using a cookie scoop or spoon
Fry until golden brown, about 2-3 minutes per side
Remove the pumpkin poppers from the oil and drain on paper towels to remove excess oil
While still warm, roll the poppers in powdered sugar to coat them evenly
Serve the pumpkin poppers warm and enjoy!
