Ingredients:
- 1 cup quinoa
- 2 cups water
- 2 medium sweet potatoes, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup toasted pecans, chopped
Instructions:
Rinse quinoa under cold water and drain
In a medium saucepan, bring 2 cups of water to a boil
Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed
Remove from heat and let it cool
Preheat your oven to 400F 200C
In a large mixing bowl, toss diced sweet potatoes with olive oil, salt, and pepper
Spread them evenly on a baking sheet and roast for 25-30 minutes or until tender and slightly caramelized
In a large salad bowl, combine cooked quinoa, roasted sweet potatoes, diced red bell pepper, chopped red onion, and fresh parsley
Top the salad with crumbled feta cheese and toasted pecans
Drizzle your favorite salad dressing over the salad or serve it with a balsamic vinaigrette on the side
Toss everything together gently, and serve this delicious Sweet Potato and Quinoa Salad
