Pineapple Stuffed Pancakes



This tropical treat is a fluffy pancake stuffed with pineapple. Every bite tastes great because of the sweet and sour pineapple chunks. You can eat them slowly for breakfast or brunch.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 cup diced pineapple
  • 1/4 cup shredded coconut optional
  • Maple syrup for serving

Instructions:

In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt

In a separate bowl, whisk together the buttermilk, egg, and melted butter

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; some lumps are okay

Gently fold in the diced pineapple and shredded coconut if using

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray

Pour a ladleful of the pancake batter onto the skillet for each pancake

Cook until bubbles form on the surface, then flip and cook the other side until golden brown

Serve the pineapple stuffed pancakes hot with maple syrup drizzled on top
