- 1 cup buttermilk

Instructions:
In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt
In a separate bowl, whisk together the buttermilk, egg, and melted butter
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; some lumps are okay
Gently fold in the diced pineapple and shredded coconut if using
