Spring Green Smoothie with Pea Shoots - The Loopy Whisk



It's nice and healthy to welcome spring with this Spring Green Smoothie with Pea Shoots. Fresh greens, fruits, and a hint of ginger make it a great choice for a healthy breakfast or a pick-me-up in the middle of the day.

Ingredients:

  • 1 cup fresh pea shoots
  • 1 ripe banana
  • 1/2 cup fresh spinach leaves
  • 1/2 cup cucumber, peeled and chopped
  • 1/2 cup green apple, chopped
  • 1/2 cup unsweetened almond milk
  • 1/4 cup Greek yogurt
  • 1 tbsp honey or to taste
  • 1/2 tsp fresh ginger, grated
  • Ice cubes optional

Instructions:

Wash and cut the fresh pea shoots so that they are clean and don't have any tough stems on them

Put the cucumber, green apple, pea shoots, ripe banana, fresh spinach leaves, and almond milk in a blender at high speed

To get the right amount of sweetness and flavor, add honey and freshly grated ginger

You can make the smoothie colder by adding a few ice cubes to the blender

As you blend the ingredients together, they will become smooth and creamy

Put the Spring Green Smoothie into glasses, and if you want, top them with extra pea shoots or cucumber slices

Serve right away and enjoy!
